Taste of Cambodia Ingredients
Beef 500 g top sirloin steak
juice from 2 limes, 2 tbsp Thai fish sauce 1 tbsp sugar, 1 tbsp chopped or grated ginger, 1 or 2 thai chilli peppers and 1 stalk lemongrass, finely chopped combine in a food processor and blend well.
1 cup chopped green beans, steamed, 1 cup of bean sprouts rinsed. 2-3 shallots, thinly sliced, 1/2 cup of roughly torn mint leaves, 4-5 springs cilantro, rough chopped, 3 tbsp finely sliced Thai basil, 1/2 cup chopped unsalted roasted peanuts, 3 spring onions chopped,
1) season steak with salt and pepper. Pan fry to medium rare. set aside for 10 min
2. slice steak into strips
3) in a large bowl, toss steak, its juices, and dressing
4) Add salad ingredients to steak and toss well
5) taste and adjust for a balance between salty fish sauce, sweet sugar, sour limes and spicy peppers
